Akudjura (ground bush tomato)  (Kosher and Halal)

Flavour - Sweet savoury taste of tamarillo/caramel and similar to concentrated sun-dried tomatoes.
Colour and Appearance - Light brown free-flowing powder.
Typical Use - Sprinkle as a seasoning for soups, vegetables, salads, cheeses or pastries. Akudjura is the seasoning used in the Sydney Salad. Salt or cheddar cheese enhances the flavour by balancing any bitterness.
Helpful hints - Use at 3 to 5% dry addition rate. Try it in biscuits or even ice-cream for something really different.

Bush Tomato  (Kosher and Halal)

Flavour - Strong tamarillo/caramel character. The darker berries tend to be more bitter.
Colour and Appearance - Approx. 10-13mm in diameter, red/brown and round with a texture similar to dried raisins.
Typical Use - Chop coarsely for focaccia, antipasto, chutneys, sauces etc. Available in a ready to use prepared form as Bush tomatoes in oil.
Helpful Hints - If product eg chutney or sauce is too bitter, use less bush tomato and/or add salt.
Storage and Packaging Size - Dry, 250g, 1kg. Approx. 1,300 fruits per kg.

Davidson's Plum  (Kosher and Halal)

Flavour - Very sour plum flavour.
Colour and Appearance - Brilliant burgundy colour. Fruits vary in size from grape to large plum sized.
Typical Use - Sweetened, can be a good substitute for quandong in sauces, dressings, desserts. Ideal for sweet and sour sauces.
Helpful Hints - In dressings with oil, Davidson's plums turn a bright pink. Use as a substitute for tamarind in satay sauces or for that delicious tang.
Storage and Packaging Size - Frozen, 1kg

 

Illawarra Plums (Kosher and Halal)

Flavour - Plum-like in flavour with a little less sweetness and a pleasant yet subtle resinous quality which is enhanced with cooking.
Colour and Appearance - Deep purple, seedless, and the size of a large grape.
Typical Use - Compliments chilli and garlic as well as sweet uses. Use in sauces, preserves, muffins, cheesecakes and fruit compotes.
Helpful Hints - Use stainless steel utensils not aluminium to prevent bitterness. Blend fruit before cooking or if serving cooked, add lemon juice or vinegar to diced fruit.

Kakadu Plums (Kosher and Halal)

Flavour - Subtle apricot.
Colour and Appearance - Pale green olive sized fruit with a stone that clings to the fruit flesh as in a mango.
Typical Use - The name and reputation of this product is a selling point so use raw fruit strips or pickle whole in sweet vinegar and use as a garnish.
Helpful Hints - World's highest fruit source of vitamin C. Slice the flesh off the seed while frozen or cook the fruit and strain the juice.
Storage and packaging size - Frozen, 1kg (approx. 420 fruits/kg)

Lemon Aspen Fruit (Kosher and Halal)

Flavour - Tart citrus flavour like a blend of grapefruit and lime with a unique aromatic character.
Colour and Appearance - Pale yellow fruit about 20-25mm in diameter with small black seeds encased in husks as in apples.
Typical Use - For a garnish, soak in sugar syrup or sweet vinegar.
Helpful Hints - Best cored or use the juice product (see below) for flavour rather than attempting to infuse flavour from the whole fruits. Do not use with any other citrus.

Lemon Aspen Juice (Kosher and Halal)

Flavour - Tart citrus flavour like a blend of grapefruit and lime with a unique aromatic character.
Colour and Appearance - Pale yellow in colour, pasteurised and packed frozen. Once thawed, store chilled.
Typical Use - Use to flavour soft desserts, dressings and sauces, sprinkle over oysters or pizza, use as a marinade with honey and soy. Use at 2% (2ml/100ml) addition rate.
Helpful Hints - DO NOT use with any other citrus.
Storage and packaging size - Frozen, 200ml, 1 litre.

Munthari (Kosher and Halal)

Flavour - Granny Smith apple flavour with a subtle spicy finish.
Colour and Appearance - Green to red and pea-sized.
Typical Use - Use whole or extended with blended apples in muffins, fruit pies, puddings. Sauté with onions or mushrooms.
Helpful Hints - Once thawed, Munthari still presents well and can be used as a garnish. Will stay whole even with prolonged cooking.

Quandong (Kosher and Halal)

Flavour - Mildly tart apricot and peach flavour.
Colour and Appearance - Bright red fruit, available either whole or as halves.
Typical Use - Sauces (meat or dessert), garnish. Helpful Hints - Do not over-cook. Simmer gently in sauce or apple juice. Enhance with orange juice. Do not over-sweeten. The seed kernels are only safe to eat if well roasted to a milk chocolate brown. This inactivates a compound which is otherwise unsafe to eat.

Riberry  (Kosher and Halal)

Flavour - Cinnamon and clove flavour.
Colour and Appearance - Pink/red, pear shape approx. 10-15mm in length.
Typical Uses - stir-frying, sauces, muffins, cakes and preserves. Also available in syrup as a glacéed fruit.
Helpful Hints - Will lose pink colour on cooking but will generally regain it on standing. Do not over-cook. Also available glaceed.

Wild Limes - Large (Kosher and Halal)

Flavour - Slightly bitter and very tart lime flavour.
Colour and appearance - Approx. 20-30mm in diameter, round and light green or yellow.
Typical Uses - Marmalades, meat jams, sauces and bitter-sweet desserts. Salt preserved or char-grilled fruit slices.
Helpful Hints - Fine slice fruit and cook down in a minimum of water. Salt lightly to balance bitterness. Sweeten to taste.

Wild Limes - Small  (Kosher and Halal)

Flavour - Slightly bitter and very tart lime flavour.
Colour and Appearance - Approx. 10-15mm in diameter, round, green, thin skin.
Typical Uses - Use whole as a garnish for mains or desserts. Helpful Hints - Cook briefly to keep limes whole or cook in a weak sugar syrup. Salt lightly to balance any bitterness.

Wild Rosella (Kosher and Halal)

Flavour - Tart raspberry and rhubarb taste.
Colour and appearance - Bright red and flower shaped with a length of about 25-40mm.
Typical Uses - sauces, pie fillings, pastries, ice-cream, sorbets, syrups and as a garnish.
Helpful Hints - Soak in sugar syrup to reduce tartness and use as garnish. Also available as Spreadable Rosella.

Rainforest Lime Splash

Flavour - delicious wild lime flavour.
Colour and Appearance - Lemon.
Typical Uses - Use at the grill when cooking any red or white meat, this splash seasoning makes use of juices on the meat and the wild lime flavour cooks on to enhance the natural character of the meat.
Helpful Hints - Splash over the grill or add into sauces - especially tasty with chicken..

Rainforest rub

Flavour - An aromatic citrus mixture with dried lemon aspen fruit with top notes of lemon myrtle and a base mix of (vegetarian) chicken stock and macadamia nut pieces
Colour and Appearance - Pale yellow colour with milled spices, herbs and nut pieces.
Typical uses - Try this seasoning on chicken, pork or even red meats either as a finishing touch, a dry marinade, added to meat stock, demi, mornay or as a topping for vegetables.
Helpful hints - Store in a cool place for longer life.

Red Desert seasoning

Flavour - An Australian Cajun seasoning powered with mountain pepper and native pepperberries.
Colour and Appearance - Orange - red seasoning with milled spices, herbs and grains.
Typical uses - Try this seasoning on chicken, pork or red meats either as a finishing touch, a dry marinade, added to meat stock, demi, mornay or as a grilled topping for those blackened meat dishes.
Helpful hints - The flavours are best expressed on heating.

Colour and Appearance - Herb and paprika mix.

Alpine pepper

Flavour - A mixed pepper blend with mountain pepper and pepperberry mixed with forest anise, inland groundwater salt, sumac and conventional pepper.
Colour and Appearance - Herb and pepper mix.
Typical uses - Use at the BBQ or grill an any meats or vegetables.
Helpful hints - The flavours are best expressed on warm foodstuffs.

Aniseed Myrtle (Kosher and Halal)

Flavour - Subtle Pernod-like aniseed flavour with a sweet aftertaste.
Colour and Appearance - A fine light green powder which can still provide texture in biscuits and cakes.
Typical Uses - Use with white meats as a sprinkle, mixed in stuffing or part of a stock seasoning.
Add to desserts (eg. ice cream), cream cheese or bread.
Helpful Hints - Extremely versatile flavouring. Oils are volatile and can dissipate with heat so best added as a post-preparation seasoning or cold-formulated. Use at around 0.5% (5g/kg) addition.

Forestberry herb (Kosher and Halal)

Flavour - Strong passionfruit, berry characters with back notes of cumin and carroway
Colour and appearance - A free-flowing green powder
Typical Use - A natural fruit flavour enhancer. Idea for berry, tropical or stone fruits. Use in ice cream, sauces, dressings or fruit compotes.
Helpful Hints - Use at around 0.5% (5g/1kg) for primary flavour and 0.1% or less for fruit enhancement

Lemon Myrtle (Kosher and Halal)

Flavour - A distinctive and smooth lemon grass, lemon and lime oil flavour.
Colour and Appearance - A free-flowing green powder.
Typical Use - Add to breads, pancakes, scones, muffins, butter cakes, cheesecakes or breads. Mix into hot cooked rice, over fish or chicken.
Helpful Hints - Extremely versatile flavouring. Oils are volatile and can dissipate with heat so best added as a post-preparation seasoning or cold-formulated. Use at around 0.5% (5g/kg)

Mountain Pepper (Kosher and Halal)

Flavour - Bushy character with a hot zing somewhere between pepper and chilli.
Colour and appearance - A free-flowing light green powder.
Typical Use - Seasoning as for conventional pepper or as a flavouring in breads, butter, sauces or even desserts.
Helpful Hints - Cook in to impart woody character. Heat removes the zing which can be re-introduced with an additional finishing seasoning. Use at around 0.5% (5g/1kg)

Native Peppermint (Kosher and Halal)

Flavour - Peppermint flavour with woody eucalyptus note.
Colour and appearance - A free-flowing light green powder.
Typical Uses - Desserts and also as a seasoning for white meats.
Helpful Hints - Very strong, suggested use rate is around 0.1% (1g/1kg).

Native Mint (Kosher and Halal)

Flavour - Very strong savoury taste that is closer to peppermint than garden mint in flavour.
Colour and Appearance - A fine, free-flowing, dark green powder
Typical Uses - Sauces, pesto, butter, bread, vinegars.
Helpful Hints - Very strong, suggested use rate is around 0.1% (1g/1kg).

Native Thyme (Kosher and Halal)

Flavour - Similar to a combination of tarragon, thyme and rosemary.
Colour and Appearance - A fine, free-flowing, light green powder.
Typical uses - Soups, stuffings, herb bread, quiches, omelettes and vegetable seasonings.
Helpful Hints - Suggested use rate is around 0.5% (5g/1kg) as for traditional thyme. Sometimes called native basil.

Native Pepperberries (frozen - whole)  (Kosher and Halal)

Flavour - A bushy flavour with a hot peppery zing from the seeds.
Colour and Appearance - Smaller than a pea and larger than a peppercorn. Round and deep purple.
Typical Uses - As a flavour or garnish, add to sauces, butter, bread, pasta, game meats.
Helpful Hints - Bleeds a light burgundy colour into cream sauces. Contrasts well with sweet corn kernels. Use approx. 6-8 berries per serve.

Native Pepperberry (ground) (Kosher and Halal)

Flavour - A bushy spice with a very hot peppery zing.
Colour and Appearance - Dark free-flowing powder which bleeds burgundy in sauces esp. cream.
Typical Uses - As an Australian substitute for pepper but with a distinctive unique flavour.
Helpful Hints - Use sparingly at around 0.1% (1g/kg) or less. Suitable for table use as for black pepper.

Seeds and nuts

Bunya bunya Nuts (halved) (Kosher and Halal)

Flavour - Similar to chestnut with a subtle pine overtone.
Colour and Appearance - Starchy white flesh with yellow central stalk. Woody shell 50mm in length, 25mm wide.
Typical Uses - Slice boiled nut meat and use as a garnish or flavouring. Re-fry boiled and nuts to make a pastry or use as a flavouring in desserts, sauces or garnishing.
Helpful Hints - Use shells for smoking meats. To remove meat from halved nuts simply bring the nuts to a boil in a minimum quantity of water (just covered).
Storage and Packaging Sizes - Frozen, 1kg zip lock bags (approx. 60 nuts per bag, 120 halves per bag)

 

Wattleseed (Kosher on request and Halal)

Flavour - Coffee-chocolate-hazelnut.
Colour and Appearance - Dark brown, free-flowing coffee-like roasted grounds.
Typical Uses - Use as a flavouring for sweet or savoury sauces or in batter, desserts and baked foods. Use 1 teaspoon of wattle per cup for Wattleccino® cappuccino.
Helpful Hints - Boil in water to soften grounds and extract flavour then add both liquid and grounds or either separately.

Wattleseed extract

Flavour - Coffee-chocolate-hazelnut
Colour and Appearance - Dark brown, liquid
Typical Uses - As for Wattleseed, use as a flavouring for sweet or savoury sauces or in batter, desserts and baked foods. Use at 2-4% addition. Simply dilute with hot water and top with frothed milk to make a Wattleccino®.
Helpful Hints - Add to whipped cream to flavour and stabilise the cream. Add to tahini or peanut butter to stop separation.
Storage and Packaging Sizes - Chilled, 200ml bottles and 1kg jerry cans

Flavour Oils

Aniseed Myrtle Oil (Halal)

Flavour - Subtle pernod-like aniseed flavour with a sweet after taste.
Colour and Appearance - Transparent pale yellow fluid.
Typical Use - Flavour cream, milk, oil, vinegar or stock for desserts, sauces, dressings. Suits apricot and pear flavours. Particularly good in ice-cream.
Helpful Hints - Flavour dissipates on heating so best used as a post-cooking flavouring at 2 to 4 drops per litre of product.
Storage and Packaging - Cool, 125ml bottles.
Special note - Pure essence available for food manufacturers.

 

Gumleaf Oil  (Halal)

Flavour - Eucalyptus flavour.
Colour and Appearance - Transparent pale yellow fluid.
Typical Uses - In combination with caramel or honey in desserts or with coriander, garlic or honey in savoury sauces. Dilute and dab onto smoked salmon or BBQ meats.
Helpful Hints - Gumleaf oil is food grade. Very strong, so use sparingly at around 2 to 4 drops per litre of oil, sauce, anglais etc.
Storage and Packaging Sizes - Cool, 125ml bottles.

 

Lemon Myrtle Oil (Halal)  

Flavour - Lemon and lime oil and lemon grass flavour.
Colour and Appearance - Transparent pale yellow oil. Typical Uses - Flavour cream, milk, oil, vinegar or stock for desserts, sauces, dressings and soups.
Helpful Hints - Flavour dissipates on heating so best used as a post-cooking flavouring at 2 to 4 drops per litre of product.
Storage and Packaging Sizes - Cool, 125ml bottles.

 

Native Peppermint Oil  (Halal)

Flavour - Primary peppermint flavour with a woody eucalyptus note.
Colour and Appearance - Transparent pale yellow fluid. Typical Uses - Flavour cream, milk, oil, vinegar or stock for desserts, sauces, dressings.
Helpful Hints - Use at 2 to 4 drops per litre of product.
Storage and Packaging Sizes - Dry, 125ml bottles.

Macadamia Nut Oil  (Kosher and Halal)

Flavour - World famous rich oily nut.
Colour and Appearance - Transparent yellow oil. Typical Uses - Salad oil, dressings, pasta flavouring.
Helpful Hints - Best used as a flavouring oil as for sesame seed oil.
Storage and Packaging Sizes - Dry 2 litre bottles

Others

Witjuties

Flavour - Nutty in taste and usually 6-10cms in length.
Typical Uses - Best served sautéed.
Helpful Hints - Do not allow to thaw else grubs will turn dark. Cook on medium heat from frozen to just crisp. Witjuties are truely an Australian delicacy which can take 2 - 7 years to reach maturity and depending upon weather conditions vary in their availability. Research is currently underway to breed witjuties for consistency and export.
Storage - Frozen (we recommend dry ice be used during transit)
Packaging - 10 per vacuum pack.
Note: Unfortunately, we are currently not able to export this product.

 

Sugarbag (Native Australian honeybee)

Flavour - Honey and mellow port flavour. Thin consistency.
Typical Uses - Enhanced with cream or in ice-cream or simply use as a drizzle.
Helpful Hints - Use cold to maximise the flavour which disappears with heat. Sugarbag is made by native Australian stingless black bees which are about 5mm to 10mm in size. Due to the introduction of the european bees, this bee is in danger of extinction.
Storage and Packaging Sizes - Store chilled, 200ml bottles.

Paperbark (Kosher and Halal)

Paperbark is a natural product which is used for its visual appeal as a platter liner and for service or when used as a cooking wrap, imparts a delicate smokey flavour from oils in the paperbark. This technique is the easiest way to smoke and cook meats in bark on a hot plate, char-grill or in a pan. Paperbark is also low in tannins and while indigestible is harmless if consumed accidentally.
Typical Uses - This product is perfect to wrap fish or chicken in with a light sprinkle of lemon myrtle then put in an oven to bake or put on a dry hot plate. It is also popular as a platter base.
Helpful Hints - If the product is dry, dampen with water to make pliable.
Storage and Packaging sizes: Stored dry, minimum 4 sheets per roll - more sheets can be used by peeling back the layers of paperbark. (each sheet is approx. 45cm X 30cm in size.) Each roll weights between 400 - 500g. Available dry or frozen for export orders. 20 roll per carton.
