Herbs, Spices and Seasonings
Australian herbs and spices and the seasonings they flavour are very versatile as rubs, marinades, pre- or post-cooking sprinkles or when used as ingredients themselves. The herbs and spices can be used to make an infinite number of delicious dishes, just think of all those recipes from our show (watch our videos on Dining Downunder. Our seasonings are designed with well rounded flavour profiles and unlike most seasonings on the market, they contain minimal, if any salt. This is why they are able to be used in so many ways rather than just as a flavoured salt.
You will also find that our herbs are vibrantly bright green as we take great pains to protect them from light and heat. Our growers pick the fresh leaves before 9am, often starting their harvests in the dark. The leaves are dried in dehumidifiers in the dark at temperatures never higher than 35degreesC for herbs such as lemon myrtle in order to preserve the aromatic essential oils which boil at just 40degreesC. Our milling technology is also designed to keep the temperatures down and we store our milled herbs frozen to lock in the flavours.
