Our high country is famous for its fresh air and pristine environment and it's from here I find the rare herbs and spices that give this sauce a flavour like no other.

Use it as an all-purpose sauce for meats and meaty seafood (kingfish or swordfish steaks). Add it to the pan when deglazing the meat juices from steak.

And by the way, try this: First heat your oven to medium or around 180C. Have your steaks well trimmed of silver and grissle and at room temperature already. I use the BBQ Bash to marinate meats for a few hours or over-night after having dipped them in Herbal-Active so nothing grows to make me sick. Place the steaks in the oven for 7 to 10 minutes as you warm up a skillet to medium-hot. Add a little frying oil such as peanut or ground nut oil. Sear the steaks in the skillet to brown each side and the meat should be perfect. Feel by squeezing gently. It should feel just firm to the touch. Remove the meat from the pan and rest it while you add a dash of red wine to the pan. Stir the sauces and heat to reduce it a little. You might even add just a dash more of my BBQ Bash to finish. Pour over the steak and serve with baked spuds and char-grilled veg.

Oh, and a Bash is Aussie slang for a mob of people milling about for a feed and a few cold ones.
